Sauce Is a System, Not a Flavor
The best wing sauces balance four things: fat (butter, oil), acid (vinegar, citrus), heat (chili), and sugar. Buffalo is fat + acid + heat with almost no sugar. Korean yangnyeom is sugar + heat + funk. BBQ is sugar-forward with smoke. When a wing tastes 'flat,' it's almost always missing acid; when it tastes 'harsh,' it's missing fat or sugar. Once you taste for the four-part balance instead of just 'spicy,' you can't unsee it.
